Chef Quie sits down on HOT 97 to tell the incredible story behind Charles Pan-Fried Chicken — the legendary Harlem institution founded by Chef Charles Gabriel, who turns 80 this year and has been serving the community for 50 years. From picking cotton on a plantation and surviving segregation in the South, to selling chicken from a table in Harlem during the crack era of the ’80s, Chef Charles never gave up. He became the first Black man Chef Quie ever saw in a chef uniform — sparking a journey that led to culinary school, a business degree, and ultimately partnering with his childhood idol to expand the brand.
During COVID, Chef Quie helped Chef Charles feed the community when restaurants were closing. Now they have three locations across NYC (with more opening soon), 78 employees, and have expanded to Abu Dhabi, LA, and Las Vegas. Chef Charles is being honored as Grand Marshal of the African American Day Parade in Harlem.
